Delille D2 Red 2021

Delille D2 Red 2021

DeLille Cellars D2 Red is a refined and expressive Bordeaux style blend from the Columbia Valley in Washington State, United States. Founded in 1992 by Charles and Greg Lill, Jay Soloff, and winemaker Chris Upchurch, DeLille Cellars was a pioneer in crafting Bordeaux style blends in the region, once being famously described as 'the Lafite Rothschild of Washington' by critic Robert Parker. The winery's philosophy is rooted in the belief that a well-crafted blend transcends the sum of its individual parts, a principle that guided the creation of D2 as their most sought-after label.

Wine Description

The aromatic profile is complex and layered, featuring initial scents of black cherry, ripe plum, and cassis, followed by nuances of milk chocolate, tobacco leaf, and crushed graphite. On the palate, the wine is full-bodied yet supple, displaying flavours of blackberry, blueberry compote, and red currant interwoven with hints of dried herbs, clove, and baking chocolate. It is defined by a luscious mouthfeel, powdery tannins, and mouthwatering acidity that lead to a long, seamless finish marked by cocoa nibs and preserved violets.

Food Pairing

It pairs exceptionally well with roasted or grilled red meats, such as steak and lamb, as well as game meats including wild boar or pork chops. For a more complex pairing, consider butternut squash risotto with black truffles or pasta dishes featuring wild mushrooms. The wine's acidity and dark fruit notes also complement aged hard cheeses and blue cheese.
