This prestigious and singular white wine originates from France, specifically from the single-hectare Clos Saint-Hilaire vineyard in the Mareuil-sur-Aÿ subregion of Champagne. Founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon, Maison Billecart Salmon has been family-owned and independent for over 200 years. The winemaking philosophy for this cuvée emphasizes ancestral methods, including the use of workhorses in the vineyard to increase biodiversity and soil porosity, which fosters the growth of concentrated grapes. The grapes come from an isolated, one-hectare plot of old vines planted in 1964, enclosed by a stone wall, and are vinified entirely in small oak barrels.

Wine Description

This 100% Pinot Noir (Blanc de Noirs) presents a sublime golden yellow hue enhanced by intense glints of coppery pink. The complex nose is noble and sensual, offering aromas of malted cereals, acacia flowers, and orange blossom, followed by roasted notes of coffee, blond tobacco, and sweet spices. On the palate, the wine is full-bodied and muscular, showcasing structure and roundness with flavours of candied citrus, ripened yellow fruits, quince paste, and apricot. Stylistically, it is characterized by mind-blowing precision, impeccable freshness, and a creamy, supple texture that avoids heaviness despite its concentration. The finish is long and authoritative, with a deliciously mineral chalkiness and persistent salinity. This wine has an ABV of 12.5%. While the vineyard uses biodynamic principles and eschews pesticides, it was officially certified organic in 2022, following the production of this vintage.

Vintage Quality

The 2007 vintage in Champagne is often recognized more for its Chardonnays, yet this cuvée produced only 4,800 numbered bottles of exceptional quality. The year provided conditions that allowed for vibrant energy and brisk acidity, which the winemakers preserved by blocking malolactic fermentation to enhance the wine's characteristic salinity and tension.
